Savoury oats or svoats (as the cool kids say) are for all the non-sugar lovers out there. A lot of people dislike sweet breakfasts, and the options for savoury breakfasts are usually limited to eggs. So, svoats are here to change things around and make your mornings more interesting than that bowl of sweetened oats. It’s also a way to incorporate some veggies in your breakfast, especially when you do have the time. Often when we have a free morning, we rustle up a basic breakfast but putting in some effort might do you some good, and is exercise in itself.

So here’s the recipe (and you can add or subtract ingredients according to your liking) svoats with mushroom, onion and thyme.

What you will need:

  • 1 Cup oatmeal
  • 2 Cups water
  • 200g mushrooms
  • Fresh thyme and fresh thyme leaves
  • 2 cloves garlic (minced)
  • 1/2 onion (finely sliced)
  • 2 tbsp olive oil + additional for garnish
  • 1/2 Cup grated cheese (optional)
  • Salt and pepper to taste

    How to make it:

    Bring a pot of water to boil, pour in the oatmeal, and reduce heat to a simmer and cover. Cook the oatmeal for 25-30 minutes, or until oats have reached desired tenderness.

    While the oats are cooking pour 2 tablespoons of olive oil in a saucepan and let oil heat up. Add garlic, followed by the onions and sauté for 3-5 minutes. Next add the mushrooms and thyme, and sauté till they are browned and have released the water. This should take 5-7 minutes.

    When vegetables are appropriately done, pull from heat and remove sprigs of thyme. Fold in the cheese into the oatmeal when it’s done. Now mix all ingredients thoroughly. Spoon the mixture into a bowl. Add olive oil and season with salt and pepper. Garnish with fresh thyme leaves.

    Great savoury breakfasts set the tone of the day right and this particular recipe is healthy (especially if you skip the cheese!) and delicious.
