We know that most people dislike eating their veggies. We’re going to sort that out for you with this week’s runner’s recipe where we make you drink your greens in the most delicious concoction. Don’t blame us when you want more!

What you will need

  • 1 banana, frozen, cut into small pieces
  • 1 cup pineapple pieces
  • 1 cup fresh parsley, spinach, or kale leaves
  • 1 cup unsweetened almond milk
  • 2 tablespoons almond butter
  • 2 tablespoons flaxseed oil
  • 1/2 teaspoon honey
  • 1 teaspoon matcha or green tea powder
  • 1/2 teaspoon finely grated ginger
    How to make it
Blend the banana, pineapple, parsley, almond milk, almond butter, flaxseed oil, honey, matcha, and ginger together, and drink up, with enough time before your run, or after it.

Since this recipe is vegan, you don’t have to worry about dairy intolerance, sugar, or meat. The matcha delivers a buzz and a punch of antioxidants.

A sureshot pick-me-up since spinach gives you your necessary vitamins, folic acid and iron, while kale helps with detoxifying as well as thanks to the antioxidants and anti-inflammatory benefits. As for the fruits, the vitamins and proteins in there will hold you in good stead on any day.

Quick to make, easy to down, we hope you drink up your veggies (and fruit) as often as you can. Bon appètit!
