We love the word ‘snacks’ as much as we love the food itself. It sums up the activity perfectly – the word itself seemingly getting over just as you were getting into the stride. But as runners snacks have just what it takes to keep us fuelled: short bursts of energy. Guac with rice crackers is one of our favourites, and the best part is we can make it as spicy as we are craving.
Here’s what you need to make it:
How to make it:
Use a large knife to finely chop the tomato (think salsa consistency) to a pulp on a board, then tip into a bowl. Halve and stone the avocados (saving one stone) and scoop out the flesh with a spoon into the same bowl as the tomato.
Tip all the other ingredients into the bowl, then season with salt and pepper. Use a whisk to roughly mash everything together. If not serving straight away, keep the stone in the guacamole (this helps to stop it going brown), cover with cling film and keep it chilled until needed. Scatter the coriander on top and then serve with the rice crackers, either on top or as a dip. As a bonus throw in some healthy fries/chips and sour cream.
Delicious and healthy. One can never go wrong with guac! Bon appètit!
