A mousse made of chocolate and espresso that only adds 25 grams of carbohydrates per serving is basically having your cake and eating it too. Runners are not unlike regular human beings. They like eating rich food too, but often it comes in the way of their exercise. But we never want to deny them the joy of a good dessert just because it might be fattening. This recipe for a chocolate espresso mousse is both delicious and terrific for your workout. It’s a low calorie, low-fat dessert that you won’t have to think twice about. Whip this up and enjoy!

What you will need:

  • 200g roughly chopped bittersweet chocolate
  • 1 & 1/2 cups skimmed milk
  • 1/4 teaspoon instant espresso powder
  • 2 egg yolks
  • 3 tablespoons agave syrup (optional)
  • 1/4 teaspoon sea salt/ regular salt
  • 8 ounces light silken tofu
  • Low-fat plain yogurt (optional)
  • How to make it:

    Place chocolate in a blender carafe. In a medium saucepan, combine milk, instant espresso powder, egg yolks, agave syrup and sea salt and bring to a simmer over low heat.

    Cook, whisking constantly, until slightly thickened, about 5 minutes, then pour mixture into blender to melt chocolate.

    Add silken tofu and blend until smooth. Pour mousse into eight small ramekins. Chill 2 hours and serve cold, garnished with low-fat plain yogurt if desired.
